Meet your roaster at origin
Diego Bermúdez has reshaped the boundaries of post-harvest coffee. At Finca El Paraíso in Cauca, fermentation is no longer guided by instinct alone but by repeatable protocol - replicable anaerobic environments, controlled microbial activity, and precise temperature management designed to build specific sensory outcomes.
At the heart of this approach is his signature thermal-shock process. After fermentation, the coffee is washed in carefully calibrated hot and cold water cycles. This rapid change in temperature halts microbial activity at the exact moment the desired profile is reached, while helping drive aromatic compounds deeper into the seed. The result is intensity with clarity - high sweetness, defined fruit, and a structure that remains clean and stable in the cup.
Diego has partnered with Native Coffee Co. to roast at origin and design a curated retail experience in their Dallas based showroom.
What Diego has created is a new model for production: origin as laboratory, flavor as design, and value staying at origin.

We do things a little bit differently in the modern coffee trade. In fact, we don’t trade at all. We partner and feature producers and roasters that craft coffee in small batches - all from origin.
