Monthly Coffee Tastings with Raul Rodas

This month’s coffee

La Providencia

Grown by Roberto Monterroso, winner of the 2022 Guatemala Cup of Excellence, this coffee comes from a farm where precision and restraint guide every decision. Roberto’s approach favors clarity over excess, with processing choices designed to reveal structure and sweetness rather than novelty.

That clarity is carried through in the roast by Raúl Rodas, World Barista Champion and founder of Paradigma Coffee. Raúl’s roasting philosophy prioritizes transparency—amplifying what the coffee already is, not what it could be forced to become. The result is a cup that feels resolved rather than performative.

We’re drawn to coffees like La Providencia because they show how excellence emerges through alignment and proximity: when producer knowledge and roasting discipline reinforce each other without distortion.

In the cup, expect maple syrup sweetness, honeyed peach, and ripe plum, expressed with balance and composure.

This is a coffee defined by trust in process—and by a dialogue that holds from farm to roast.

Meet your roaster at origin

We are so excited to collaborate with World Barista Champion, Raul Rodas, to custom roast your coffee for this series.

Raul is a green buyer and owner/roaster of Paradigma Coffee in Guatemala. His approach to coffee is unique, involving regional small lot producers directly in the design, cultivation, and processing of each coffee.

His coffees push beyond the full-bodied, chocolate character that has traditionally marked Guatemalan coffees and explore a fresh range of flavor profiles through natural process and fermentation.

Raul won the World Barista Championship in Vienna in 2012 and a three-time winner of Guatemala’s Brewer’s Cup.

Coffee designed for equity

We do things a little bit differently in the modern coffee trade. In fact, we don’t trade at all. We partner directly with producers and roasters to craft coffee in small batches - all from origin.

Roasting at origin means you get coffees that are uniquely reflective of each region. Producers and roasters working together to express their craft, varietals, and time-honored growing traditions.

It also means more what you pay stays in coffee producing countries versus typical coffee models that focus on trading green coffee.
