Marago—often called the giant bean—is one of Guatemala’s most distinctive and least common varietals. Grown on the steep slopes of the Sierra de las Minas, the cherry develops slowly inside the cool, high-elevation microclimate. That extra time on the tree gives the coffee its signature softness: a gentle citrus lift, layers of dark-chocolate richness, and a caramel sweetness that lingers long after the cup cools.

This lot from Café de las Minas is a quiet study in balance. Unlike the louder fruit-forward coffees that dominate the specialty landscape, Maragogipe offers nuance rather than intensity. Think orange zest over warm chocolate, a smooth creamy texture, and a finish that feels almost honeyed.

For Guatemala, Maragogipe is also a piece of living heritage. It’s a varietal that demands patience—lower yields, slower development, careful picking—yet it rewards growers with a profile that can’t be replicated by modern hybrids. In a changing climate, these slower-growing heirloom varietals remind us of the diversity and resilience built into coffee’s genetic past.
